Flourless banana cinnamon pancakes

Just three ingredients in the batter, ready in 10 minutes.

Rico's note: When the kids ask for pancakes on Sunday, make these — no flour and no stress, ready before the coffee gets cold.

Ingredients

  • 2 ripe bananas (240 g / 8½ oz)
  • 2 eggs (100 g / 3½ oz)
  • 1 tsp ground cinnamon (2 g)
  • 1 tsp coconut oil for cooking (5 g)
  • 50 g (1¾ oz) berries, to serve

Method

  1. Mash the bananas in a shallow bowl with a fork into a chunky purée.
  2. Add the eggs and cinnamon and mix well into a smooth batter.
