Fennel and lemon soup

Anise and citrus notes — a different soup to break the routine.

Rico's note: Fennel can take some getting used to, but once you try this lemony version, you'll start buying it on purpose.

Ingredients

  • 2 fennel bulbs, cut into pieces (500 g / 1 lb)
  • 1 potato, diced (150 g / 5½ oz)
  • 1 chopped onion (150 g / 5½ oz)
  • 1 lemon, zest and juice (10 g)
  • 1 liter (4¼ cups) water
  • 2 tbsp olive oil (20 g / ¾ oz)
  • salt and black pepper, to taste

Method

  1. Sauté the onion in the olive oil until lightly golden.
  2. Add the cut fennel and potato.
