Poached egg whites on a vanilla custard sweetened only with dates.

Rico's note: This is the dessert for when you have guests and want to impress without spending hours in the kitchen.

Ingredients

  • 4 egg whites (132 g / 4½ oz)
  • 3 egg yolks (51 g / 1¾ oz)
  • 300 ml (1¼ cups) almond milk
  • 2 Medjool dates, blended into a paste (40 g / 1½ oz)
  • 1 tsp vanilla extract (3 g)
  • ground cinnamon, as needed (3 g) — for sprinkling

Method

  1. Make the custard: warm the almond milk with the blended dates and vanilla, stirring until dissolved.
  2. Off the heat, add the yolks, stirring quickly so they don't curdle, then return to low heat until slightly thickened.
