Quick chickpea curry

Creamy coconut milk and chickpea curry, ready in under 25 minutes.

Rico's note: Keep a can of coconut milk and some cooked chickpeas in the pantry for nights when the fridge is nearly empty — this saves dinner in 20 minutes.

Ingredients

  • 400 g (14 oz) cooked chickpeas, drained
  • 200 ml (¾ cup) light coconut milk
  • 200 g (7 oz) canned peeled tomatoes, crushed
  • 1 chopped onion (100 g / 3½ oz)
  • 2 cloves garlic, minced (10 g)
  • 1½ tbsp olive oil (15 g / ½ oz)
  • 80 g (2¾ oz) fresh spinach
  • 140 g (5 oz) white rice, uncooked — to serve
  • 1 tbsp curry powder (8 g)
  • salt and black pepper, to taste

Method

  1. Put the rice on to cook in salted water, about 15 minutes.
  2. Meanwhile, heat the olive oil in a saucepan and sauté the onion and garlic for 4 minutes.
