Egg white omelet with mushrooms and spinach

A light, protein-packed omelet filled with sautéed mushrooms and fresh spinach.

Rico's note: The Saturday-morning omelet for after training: almost pure protein, and it fills you up without weighing you down.

Ingredients

  • 5 egg whites (165 g / 6 oz)
  • 1 whole egg (50 g / 1¾ oz)
  • 200 g (7 oz) mixed mushrooms, sliced
  • 1 handful of fresh spinach (50 g / 1¾ oz)
  • 1 handful of cherry tomatoes (50 g / 1¾ oz)
  • ¼ chopped onion (50 g / 1¾ oz)
  • 1 clove garlic, minced (6 g)
  • 10 g olive oil
  • herbs (thyme or oregano), to taste
  • salt and pepper, to taste

Method

  1. Slice the mushrooms and chop the onion and garlic.
  2. Heat half the olive oil in a nonstick skillet over medium heat.
