Egg white omelet with bell peppers

Pure protein, plenty of color, almost no fat.

Rico's note: On cutting days, make this instead of whole eggs — it still fills you up and doesn't weigh you down.

Ingredients

  • 4 egg whites (120 g / 4 oz)
  • 1 red bell pepper (120 g / 4 oz)
  • 1 green bell pepper (100 g / 3½ oz)
  • 1 tbsp olive oil (10 g)
  • fresh chives, salt and pepper, to taste

Method

  1. Cut the bell peppers into small cubes.
  2. Heat the olive oil in a skillet and sauté the peppers for 4 to 5 minutes.
