Date cinnamon cake

Sweetened only by the dates, with coconut flour and a touch of cinnamon.

Rico's note: When the fridge is nearly empty but there are dates in the pantry, this is the cake to make — it doesn't need anything else sweet.

Ingredients

  • 1 cup unsweetened dates, chopped (150 g / 5½ oz)
  • 1 cup hot water (240 g / 8½ oz)
  • 1 cup coconut flour (112 g / 4 oz)
  • 1 tsp baking soda (5 g)
  • 1 tsp baking powder (4 g)
  • 4 eggs (200 g / 7 oz)
  • ½ cup coconut oil (103 g / 3¾ oz)
  • 1 tsp cinnamon (3 g)

Method

  1. Combine the chopped dates, baking soda and hot water. Let the dates soften for 10 minutes.
  2. Preheat the oven to 180 °C (350 °F), then grease and line the pan.
