Sweet little bites sweetened only with dates, made in fifteen minutes.

Rico's note: Make a batch on Sunday and keep them in the fridge for when you want something sweet after dinner.

Ingredients

  • 200 g (7 oz) pitted Medjool dates
  • 50 g (1¾ oz) raw almonds
  • 3 tbsp pure cocoa powder (18 g / ¾ oz)
  • 2 tbsp shredded coconut (10 g)
  • 1 tsp vanilla extract (5 g)
  • 1 pinch sea salt (1 g)
  • cocoa powder or shredded coconut, for coating (10 g)

Method

  1. Put the dates in the food processor and pulse into a coarse paste.
  2. Add the almonds and pulse until they're in small pieces, without overprocessing.
