Creamy scrambled eggs with spinach

Ready in 8 minutes and still creamy.

Rico's note: For mornings when you wake up late and need real protein before heading out. The trick is taking the skillet off the heat just before they're done.

Ingredients

  • 3 eggs (150 g / 5½ oz)
  • 40 g (1½ oz) fresh spinach
  • 1 tbsp olive oil (10 g)
  • salt and black pepper, to taste

Method

  1. Heat the olive oil in a nonstick skillet over medium heat.
  2. Add the spinach and let it wilt for about a minute, stirring constantly.
