Creamy red lentil soup

A smooth red lentil soup with carrot, turmeric and cumin.

Rico's note: Blend half of this soup and leave the other half whole — you get just the right creaminess without losing texture.

Ingredients

  • 200 g (7 oz) red lentils
  • 1 onion (100 g / 3½ oz)
  • 2 carrots (120 g / 4 oz)
  • 2 cloves garlic (6 g)
  • 1 tsp cumin (2 g)
  • 1 tsp turmeric (2 g)
  • 800 ml (3¼ cups) vegetable broth
  • 1 tbsp extra-virgin olive oil (10 g)
  • fresh cilantro, to taste (5 g)
  • 1 lemon (30 g / 1 oz)

Method

  1. Rinse the red lentils well under running water.
  2. Sauté the onion and garlic in olive oil.
