Cottage cheese protein pizza

A crust made of egg and cottage cheese, crisp underneath and generously topped.

Rico's note: For Fridays when you're craving pizza but don't want to break your routine — the crust sets firm as long as you don't rush the baking.

Ingredients

  • 2 eggs (100 g / 3½ oz)
  • 1 cup cottage cheese (200 g / 7 oz)
  • 60 g (2 oz) oat flour
  • salt, pepper, garlic powder and oregano, to taste
  • 50 g (1¾ oz) tomato puree — topping
  • 60 g (2 oz) shredded reduced-fat mozzarella — topping
  • 150 g (5½ oz) fake bacon (chicken-based, separate recipe) — topping
  • 63 g (2¼ oz) reduced-fat fresh mozzarella — topping
  • olives, mushrooms and basil, to taste — optional, not included in the macros

Method

  1. Preheat the oven to 180 °C (350 °F).
  2. In a bowl, whisk the eggs, cottage cheese, oat flour and seasonings into a smooth batter.
