Cottage cheese pancakes

Tall, protein-packed pancakes with chunks of dark chocolate inside.

Rico's note: A go-to for early-morning workouts — you can eat them before you head out the door.

Ingredients

  • ¼ cup egg whites (60 g / 2 oz)
  • ½ cup cottage cheese (100 g / 3½ oz)
  • 60 g (2 oz) low-fat Greek yogurt
  • 4 tbsp cookie-flavored oat flour (40 g / 1½ oz)
  • 25 g (1 oz) cookie or vanilla protein powder
  • 1 square 85% dark chocolate (10 g) — no added sugar: sugar-free 85% dark chocolate
  • sugar, to taste — optional; no added sugar: sweetener to taste
  • olive oil, for greasing

Method

  1. In a bowl, mix the egg whites, cottage cheese and Greek yogurt until smooth.
  2. Add the oat flour and protein powder. If you're using sugar, add it now and stir until you have a creamy batter.
