Cookie baked oats

Oven-baked oats that taste like a cookie, cut into handy squares.

Rico's note: Cut it into squares on Sunday and you have an afternoon snack all week. Whatever you don't eat within 4 days goes in the freezer.

Ingredients

  • 2 very ripe bananas (240 g / 8½ oz)
  • 200 g (7 oz) rolled oats
  • 60 g (2 oz) cookie-flavored protein powder
  • 375 ml (1½ cups) almond milk (or another)
  • ground cinnamon, to taste
  • 1 tsp baking powder (4 g)
  • 20 g (¾ oz) dark chocolate chips — no added sugar: sugar-free dark chocolate chips

Method

  1. Preheat the oven to 180 °C (350 °F) and line a 20 cm (8 in) square baking pan with parchment paper.
  2. In a large bowl, mash the bananas well.
