Coffee icebox cake with yogurt cream

Layers of coffee-soaked cookies and yogurt cream, with no baking.

Rico's note: Leave this to set in the fridge overnight and the next day your dessert for the week is ready.

Ingredients

  • 150 g (5½ oz) reduced-fat cream cheese
  • 150 g (5½ oz) coffee protein pudding
  • 3 gelatin leaves (6 g)
  • 1 tbsp vanilla flavoring (13 g) — optional
  • 1 package of sugar-free Maria cookies (150 g / 5½ oz)
  • strong instant coffee, as needed
  • sugar, to taste — no added sugar: sweetener to taste

Method

  1. Soak the gelatin leaves in cold water for 5 minutes. Squeeze them out well and melt in the microwave for about 30 seconds.
  2. In a bowl, beat the cheese spread with the coffee protein pudding until creamy.
