Coconut lime mousse

Creamy, fresh and ready in fifteen minutes of work

Rico's note: This mousse looks like a lot of effort, but you only whip three things together; keep an extra lime for zesting over the top.

Ingredients

  • 400 ml (1¾ cups) coconut cream — very cold, ideally chilled overnight
  • 3 limes, juice only (90 g / 3¼ oz)
  • 2 limes, zest only (10 g)
  • 4 pitted Medjool dates (96 g / 3½ oz)
  • 1 tsp vanilla flavoring (5 g)
  • lime slices, to decorate, as needed

Method

  1. Leave the can of coconut cream in the fridge overnight so the solid part separates well.
  2. Blend the dates with the lime juice until you have a smooth purée.
