Coconut cups with berries

Layers of coconut cream and fresh fruit, ready in minutes.

Rico's note: Make these in individual glasses when you have guests — they look lovely and nobody guesses there's no sugar.

Ingredients

  • 400 ml (1¾ cups) coconut cream (solid part)
  • 4 Medjool dates, blended into a paste (96 g / 3½ oz)
  • 1 tsp vanilla extract (5 g)
  • 200 g (7 oz) assorted berries
  • 1 lemon, zest only (2 g)
  • fresh mint, for garnish

Method

  1. Beat the coconut cream with the dates and vanilla until smooth and creamy.
  2. Gently wash the berries and dry them well.
