Chocolate zucchini cake

Extra moist thanks to grated zucchini, with no hint of vegetable.

Ingredients

  • 120 g (4 oz) finely grated zucchini, not drained
  • 96 g (3½ oz) almond flour
  • 56 g (2 oz) coconut flour
  • 45 g (1½ oz) 100% cocoa powder
  • 105 g (3¾ oz) white or brown sugar — no added sugar: 150 g erythritol
  • 1 tsp baking soda (5 g)
  • 1 tsp baking powder (5 g)
  • 3 eggs (150 g / 5½ oz)
  • 109 g (3¾ oz) coconut oil
  • 1 tsp vanilla extract (4 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F), grease a pan and line the bottom with parchment paper.
  2. Grate the zucchini finely — no need to drain or squeeze it.
