Chocolate stout cake

A deep chocolate cake with a toasty note from dark beer.

Rico's note: Always use a gluten-free dark beer in this cake — it adds a toasty note that cocoa alone can't. It's great with coffee after dinner.

Ingredients

  • 1 cup gluten-free dark beer, stout (240 g / 8½ oz)
  • 1 cup almond flour (96 g / 3½ oz)
  • 1 cup rice flour (150 g / 5½ oz)
  • ⅔ cup white or brown sugar (135 g / 5 oz) — no added sugar: 1 cup erythritol (200 g)
  • ¾ cup 100% cocoa powder (90 g / 3¼ oz)
  • 1 tsp baking soda (5 g)
  • 1 tsp baking powder (4 g)
  • 2 eggs (100 g / 3½ oz)
  • ½ cup coconut oil (100 g / 3½ oz)
  • ½ cup plain yogurt (122.5 g / 4½ oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 170 °C (340 °F) and grease a round pan.
  2. In a bowl, mix the flours, sugar, cocoa, baking soda and baking powder.
