Chocolate oat rolls

Soft, sweet little rolls, ready in half an hour and great to take along.

Rico's note: One batch on Sunday takes care of breakfast Monday through Friday, with nothing else to think about.

Ingredients

  • 4 eggs (200 g / 7 oz)
  • 200 g (7 oz) cottage cheese
  • 275 g (9½ oz) oat flour (cookie or vanilla flavor)
  • 1 tsp baking powder (4 g)
  • cinnamon, to taste
  • 60 ml (¼ cup) maple syrup or honey — no added sugar: 60 ml sugar-free maple-flavored syrup (or another sweetener)
  • 60 g (2 oz) dark chocolate, broken into pieces (or chips)

Method

  1. Blend the cottage cheese with the eggs until smooth.
  2. In a bowl, combine the oat flour, baking powder and cinnamon, then mix well with the egg and cheese base.
