Chocolate banana bread

A dense banana and cocoa loaf, with chunks of dark chocolate inside.

Rico's note: This is where the bananas nobody wants to eat anymore should go — the riper they are, the better it gets.

Ingredients

  • 2 ripe bananas (236 g / 8½ oz)
  • 2 eggs (100 g / 3½ oz)
  • 70 g (2½ oz) cottage cheese
  • 30 g (1 oz) reduced-fat cocoa powder
  • 60 g (2 oz) chocolate protein powder
  • 1 tbsp chocolate hazelnut spread, or another nut butter (15 g / ½ oz) — optional, makes the cake moister
  • 2 squares 85% dark chocolate (20 g / ¾ oz) — no added sugar: sugar-free 85% dark chocolate
  • 1 pinch salt (1 g)
  • 1 tsp baking powder (4 g) — optional

Method

  1. Blend the bananas, eggs, cottage cheese and nut butter, if using, until smooth.
  2. Transfer to a bowl and add the protein powder, cocoa powder, baking powder (if you want it to rise) and salt. Stir until creamy, with no lumps.
