Ingredients
- 1½ cups almond flour (150 g / 5½ oz) — for the base
- 2 tbsp cocoa powder (10 g) — for the base
- 1½ tbsp sugar (18 g / ¾ oz) — for the base; no added sugar: 2 tbsp erythritol (24 g)
- 3 tbsp melted coconut oil (39 g / 1½ oz) — for the base
- 1 cup raw cashews, soaked 4 hours (150 g / 5½ oz) — for the filling
- ½ cup coconut milk (120 g / 4 oz) — for the filling
- 3 tbsp white or brown sugar (36 g / 1¼ oz) — for the filling; no added sugar: ¼ cup erythritol (48 g)
- 1 tsp vanilla extract (4 g) — for the filling
In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.
Method
- Mix the crust ingredients — almond flour, cocoa powder and sugar — with the melted coconut oil until it forms a damp dough.
- Press the dough over the bottom of a tart pan with a removable bottom.
