Chocolate almond butter cake

Dense as a brownie, made almost entirely from almond butter and cocoa.

Rico's note: This is practically a brownie dressed up as a cake — quick to make when a real chocolate craving hits.

Ingredients

  • 1 cup almond butter (250 g / 9 oz)
  • ½ cup white or brown sugar (100 g / 3½ oz) — no added sugar: ¾ cup erythritol (142 g)
  • ½ cup cocoa powder (45 g / 1½ oz)
  • 3 eggs (150 g / 5½ oz)
  • 1 tsp baking soda (5 g)
  • 1 tsp apple cider vinegar (5 g)
  • ¼ cup unsweetened almond milk, or water (60 g / 2 oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Heat the oven to 180 °C (350 °F) and grease a small 20 × 20 cm (8 × 8 in) pan.
  2. In a stand mixer, beat the almond butter, sugar and cocoa until creamy.
