Chilled lemon tart

An almond and coconut base with a set lemon filling, no oven needed.

Rico's note: The tart to bring to a birthday at work — nobody guesses it has no added sugar or dairy.

Ingredients

  • 150 g (5½ oz) ground almonds — for the base
  • 80 g (2¾ oz) shredded coconut — for the base
  • 5 Medjool dates, blended into a paste (100 g / 3½ oz) — for the base
  • 3 tbsp melted coconut oil (30 g / 1 oz) — for the base
  • 5 lemons, juice only (150 g / 5½ oz) — for the filling
  • 3 lemons, zest only (6 g) — for the filling
  • 300 ml (1¼ cups) coconut cream — for the filling
  • 8 Medjool dates (160 g / 5½ oz) — for the filling
  • 3 tbsp agar-agar powder (24 g / ¾ oz) — for the filling

Method

  1. Process the crust ingredients until they come together easily into a dough.
  2. Press it firmly over the bottom of a springform pan.
