Chicken tikka with spiced cauliflower

Spice-marinated chicken skewers with roasted cauliflower on the side.

Rico's note: Marinate the chicken the night before whenever you know the next day will be hectic; then all that's left is to grill it.

Ingredients

  • 250 g (9 oz) chicken breast, diced
  • 1 lemon, juice only (30 g / 1 oz)
  • 2 tsp paprika (5 g)
  • 1 tsp curry powder (2 g)
  • 1 tbsp grated ginger and garlic (6 g)
  • 1 tbsp olive oil (15 g / ½ oz)
  • 1 medium head of cauliflower, cut into florets (500 g / 1 lb)
  • cumin and turmeric, to taste
  • 1 handful of fresh cilantro, chopped (10 g)
  • salt, to taste

Method

  1. Cut the chicken into cubes and toss in a bowl with the lemon juice, paprika, curry powder, garlic, ginger and half the olive oil.
  2. Marinate in the fridge for at least 30 minutes, or overnight for more flavor.
