Chicken curry with light coconut milk

Chicken, bell pepper and zucchini in a mild curry, all in one pot.

Rico's note: Chicken curry holds up all week and tastes even better on day two. Whatever you don't eat within 4 days goes in the freezer.

Ingredients

  • 500 g (1 lb) chicken breast, diced
  • 1 onion (120 g / 4 oz)
  • 2 cloves garlic (6 g)
  • 10 g fresh ginger
  • 1 tbsp curry powder (8 g)
  • 1 red bell pepper (100 g / 3½ oz) — cut into strips
  • 1 zucchini (200 g / 7 oz) — cut into half-moons
  • 400 g (14 oz) diced tomatoes
  • 300 ml (1¼ cups) light coconut milk
  • 1 tbsp olive oil (15 g / ½ oz)
  • cilantro, lime juice and salt, to taste

Method

  1. Heat the olive oil in a pot. Sauté the onion, garlic and ginger for 4 minutes.
  2. Add the curry powder and stir constantly for 1 minute to release its aroma without burning.
