Chicken crust pizza

The crust is made from just chicken and egg — the toppings are up to you.

Rico's note: Make this crust whenever you want pizza but don't want to feel weighed down midweek.

Ingredients

  • 500 g (1 lb) ground chicken
  • 2 eggs (100 g / 3½ oz)
  • salt, pepper, paprika and garlic powder, to taste
  • 100 g (3½ oz) tomato puree
  • 80 g (2¾ oz) shredded reduced-fat cheese
  • toppings of your choice (reduced-fat mozzarella, spinach, olives), to taste — optional, not included in the base macros

Method

  1. In a bowl, mix the ground chicken with the eggs and seasonings until evenly combined.
  2. Spread the mixture on a baking sheet lined with parchment paper, forming a thin, even crust.
