Chia pudding with mango
Chia seeds soaked in coconut drink, topped with fresh mango.
Ingredients
- 3 tbsp chia seeds (36 g / 1¼ oz)
- 200 ml (¾ cup) coconut milk beverage
- 1 ripe mango (150 g / 5½ oz)
- 1 tsp vanilla extract (5 g)
- 1 tsp honey (7 g)
- 1 tbsp shredded coconut (8 g) — to decorate
Method
- In a bowl with a lid, mix the chia seeds with the coconut milk beverage, vanilla and honey.
- Stir well to break up any clumps and refrigerate for 3 hours, or overnight.
