Chai spice cake

A spiced cake with cinnamon, ginger and cardamom, like chai in a slice.

Rico's note: On cold days, this spiced cake tastes like a cup of chai, only in a slice. It goes well with coffee after dinner.

Ingredients

  • 1 cup almond flour (96 g / 3½ oz)
  • 1 cup gluten-free oat flour (90 g / 3¼ oz)
  • ½ cup white or brown sugar (100 g / 3½ oz) — no added sugar: ¾ cup erythritol (150 g)
  • 1 tsp ground cinnamon (2 g)
  • 1 tsp ground ginger (2 g)
  • ½ tsp ground cardamom (1 g)
  • ½ tsp ground cloves (2 g)
  • 1 tbsp baking powder (12 g)
  • 3 eggs (150 g / 5½ oz)
  • ½ cup coconut oil (100 g / 3½ oz)
  • ½ cup almond milk (or strong black tea, cold) (120 g / 4 oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a pan.
  2. In a bowl, mix the almond flour, oat flour, sugar, all the spices and the baking powder.
