Cassava orange cake

A moist, dense cake of grated cassava, scented with orange.

Rico's note: Raw grated cassava brings a moistness no flour can match — this one holds up well through a week of packed lunches.

Ingredients

  • 500 g (1 lb) raw cassava, peeled and grated
  • 1 cup almond flour (96 g / 3½ oz)
  • ½ cup sugar (100 g / 3½ oz) — no added sugar: ¾ cup erythritol (142 g)
  • 2 oranges (zest only)
  • 3 eggs (150 g / 5½ oz)
  • ½ cup coconut oil (103 g / 3¾ oz)
  • ½ cup orange juice (120 g / 4 oz)
  • 1 tbsp baking powder (12 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease the pan.
  2. In a large bowl, combine the grated cassava, almond flour, sugar and orange zest.
