Cassava coconut cake

Dense, creamy and with no flour at all in the batter.

Rico's note: This is the recipe for when there's cassava left over from the week's soup — nothing goes to waste.

Ingredients

  • 500 g (1 lb) raw cassava, peeled and finely grated
  • 1 cup unsweetened shredded coconut (80 g / 2¾ oz)
  • ½ cup sugar (100 g / 3½ oz) — no added sugar: ¾ cup erythritol (135 g)
  • 3 eggs (150 g / 5½ oz)
  • 200 ml (¾ cup) coconut milk
  • 3 tbsp melted coconut oil (37.5 g / 1¼ oz)
  • 1 tbsp baking powder (12 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a baking dish or cake pan.
  2. Grate the raw cassava on the fine side of a grater — no need to squeeze it.
