Cashew cake with crumble topping

Creamy cashew cake under a crunchy, fragrant crumble.

Rico's note: The crumble on top makes this cake look like extra work, when really it's just mixing three things.

Ingredients

  • 168 g (6 oz) cashew flour
  • 158 g (5½ oz) rice flour
  • 105 g (3¾ oz) white or brown sugar — no added sugar: 150 g erythritol
  • 1 tbsp baking powder (14 g)
  • 3 eggs (150 g / 5½ oz)
  • 120 ml (½ cup) coconut milk
  • 73 g (2½ oz) coconut oil
  • 60 g (2 oz) cashews, roughly crushed (crumble)
  • 18 g (¾ oz) sugar (crumble) — no added sugar: 25 g erythritol (crumble)
  • 1 tsp ground cinnamon, crumble (3 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a pan.
  2. Make the crumble first: mix the coarsely crushed cashews with the sugar and cinnamon. Set aside.
