Carrot turmeric cake

Moist, fragrant and gluten-free, with a warm hint of spice.

Rico's note: Save yourself some work: grate the carrot finely in a food processor and you'll be done ten minutes sooner. It stays moist even without gluten.

Ingredients

  • 200 g (7 oz) finely grated carrot
  • 150 g (5½ oz) almond flour
  • 50 g (1¾ oz) rice flour
  • 100 g (3½ oz) coconut sugar
  • 10 g baking powder
  • 5 g ground turmeric
  • 2 g ground ginger
  • 1 pinch ground black pepper (0.5 g)
  • 2 large eggs (100 g / 3½ oz)
  • 100 ml (½ cup) almond milk
  • 60 ml (¼ cup) extra-virgin olive oil
  • 5 ml vanilla extract
  • chopped walnuts or raisins, to taste — optional

Method

  1. Preheat the air fryer to 160 °C (325 °F).
  2. In a large bowl, mix the almond flour, rice flour, coconut sugar, baking powder, turmeric, ginger and black pepper.
