Cantaloupe sorbet

Smooth, delicate and very fragrant — the subtlest sorbet on the list.

Rico's note: The sorbet for when there's leftover melon in the fridge and nobody wants any more slices — this way it always disappears.

Ingredients

  • 400 g (14 oz) ripe cantaloupe, peeled, seeded and cubed
  • ½ lime, juice only (15 g / ½ oz)
  • 10 g sugar — adjust to taste; or the same amount of maple syrup; no added sugar: 15 g erythritol
  • water, as needed — only if you need it for the RE-SPIN

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Blend the cantaloupe, lime juice and sugar until you have a very smooth liquid.
  2. Pour into the pint container without going past the MAX line.
