Blender rice bread

Just soaked rice, liquids and the oven — no special flours.

Rico's note: Made for when there's no special flour in the house, just rice in the pantry. Soak the rice the night before, and the next day it's ten minutes of work.

Ingredients

  • 1 cup rice, uncooked (200 g / 7 oz) — soaked in water for at least 4 hours
  • 3 eggs (150 g / 5½ oz)
  • ½ cup milk (plant-based or dairy, unsweetened) (120 g / 4 oz)
  • ¼ cup olive oil (55 g / 2 oz)
  • 1 tsp salt (6 g)
  • 1 tbsp sugar (12 g) — no added sugar: 2 tbsp erythritol (20 g)
  • 1 tbsp baking powder (12 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. The day before, soak the rice in water for at least 4 hours.
  2. Preheat the oven to 180 °C (350 °F) and grease a loaf pan.
