Blender corn cake

Everything goes into the blender — no effort, no wheat flour.

Rico's note: This is the cake for when you get home late and just want to throw everything in the blender and switch it on.

Ingredients

  • 1 cup cooked sweet corn, drained (165 g / 6 oz)
  • 3 eggs (150 g / 5½ oz)
  • ½ cup coconut milk (120 g / 4 oz)
  • ⅓ cup coconut oil (66.7 g / 2¼ oz)
  • ½ cup sugar (100 g / 3½ oz) — no added sugar: ¾ cup erythritol (135 g)
  • 1 cup fine cornmeal (150 g / 5½ oz)
  • ½ cup unsweetened shredded coconut (40 g / 1½ oz)
  • 1 tbsp baking powder (12 g)
  • 1 pinch salt (0.3 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a cake pan.
  2. In the blender, blend the corn, eggs, coconut milk, coconut oil and sugar for about 3 minutes, until creamy.
