Black-eyed pea bowl with vegetables

Black-eyed peas with tomato, cucumber and bell pepper, properly dressed.

Ingredients

  • 200 g (7 oz) cooked black-eyed peas
  • 1 medium tomato, chopped (150 g / 5½ oz)
  • ½ cucumber, chopped (150 g / 5½ oz)
  • ¼ red onion, thinly sliced (40 g / 1½ oz)
  • ½ bell pepper (red or yellow), chopped (60 g / 2 oz)
  • 2 tbsp extra-virgin olive oil (20 g / ¾ oz)
  • 1 tbsp red wine vinegar (15 g / ½ oz)
  • fresh parsley, salt and pepper, to taste

Method

  1. In a large bowl, combine the black-eyed peas, tomato, cucumber, red onion and bell pepper.
  2. In a small bowl, whisk the olive oil, vinegar, salt and pepper until emulsified.
