Black-eyed pea and tomato soup

Hearty and comforting, great for a packed lunch.

Rico's note: Use beans cooked the day before — it saves time and the soup is ready after twenty minutes on the stove.

Ingredients

  • 300 g (10½ oz) cooked black-eyed peas
  • 2 carrots, diced (160 g / 5½ oz)
  • 1 potato, diced (150 g / 5½ oz)
  • 1 chopped onion (150 g / 5½ oz)
  • 2 cloves garlic, minced (6 g)
  • 1 tomato, chopped (120 g / 4 oz)
  • 1 bay leaf (0.2 g)
  • 1½ liters (6¼ cups) water
  • 3 tbsp olive oil (30 g / 1 oz)

Method

  1. Sauté the onion, garlic and chopped tomato in the olive oil for about 5 minutes.
  2. Add the diced carrots and potato.
