Black bean cocoa brownie

Moist and fudgy, with black beans instead of flour, made in the air fryer.

Rico's note: Black beans in a brownie sounds like a joke — right up until you've eaten almost the whole pan. Take it out while the center is still moist; don't overcook it.

Ingredients

  • 200 g (7 oz) cooked black beans, drained
  • 50 g (1¾ oz) unsweetened cocoa powder
  • 60 g (2 oz) coconut sugar
  • 60 ml (¼ cup) extra-virgin olive oil
  • 2 large eggs (100 g / 3½ oz)
  • 1 tsp vanilla extract (4 g)
  • ½ tsp baking powder (2 g)
  • 1 pinch fleur de sel (1 g)
  • 50 g (1¾ oz) bittersweet chocolate chips — optional

Method

  1. Preheat the air fryer to 170 °C (340 °F).
  2. In the food processor, combine the black beans, cocoa powder, coconut sugar, olive oil, eggs, vanilla, baking powder and fleur de sel. Process until the batter is smooth, with no visible pieces of bean.
