Berry ice cream

Creamy ice cream made with just frozen fruit and dates, no ice cream maker needed.

Rico's note: Keep a bag of berries in the freezer just for this, for whenever you want real ice cream.

Ingredients

  • 400 g (14 oz) frozen berries
  • 4 Medjool dates (80 g / 2¾ oz)
  • 100 ml (½ cup) coconut milk beverage
  • ½ lemon, juice only (15 g / ½ oz)
  • fresh mint — to decorate

Method

  1. If the berries aren't frozen yet, freeze them for at least 4 hours.
  2. Put the frozen berries in the food processor with the dates and coconut milk beverage.
