Berry gelatin

A light, set dessert, sweetened only with fruit and dates.

Rico's note: Make it on Sunday in small bowls and keep it in the fridge for the days ahead. It's a guilt-free dessert after dinner.

Ingredients

  • 300 g (10½ oz) mixed berries — fresh or frozen
  • 200 ml (¾ cup) water
  • 3 Medjool dates (60 g / 2 oz) — pitted
  • 3 tbsp agar-agar powder (24 g / ¾ oz)
  • extra whole berries (50 g / 1¾ oz) — to decorate
  • fresh mint — to decorate

Method

  1. Blend the berries with the dates and water until you have a smooth liquid.
  2. Pour it all through a fine-mesh strainer to remove the seeds.
