Basic vanilla cake

The simple recipe that's the starting point for everything.

Rico's note: Learn this one by heart — it's the base for almost every cake; only what you add on top changes.

Ingredients

  • 2 cups almond flour (200 g / 7 oz)
  • ½ cup coconut flour (56 g / 2 oz)
  • ½ cup sugar (100 g / 3½ oz) — no added sugar: ¾ cup erythritol (135 g)
  • 1 tbsp baking powder (12 g)
  • ½ tsp salt (3 g)
  • 4 eggs (200 g / 7 oz)
  • ½ cup melted coconut oil (100 g / 3½ oz)
  • ½ cup almond milk (120 g / 4 oz)
  • 2 tsp vanilla extract (8 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F); grease the pan and line it with parchment paper.
  2. Mix the dry ingredients: almond flour, coconut flour, sugar, baking powder and salt.
