Banana peanut butter ice cream

Just frozen bananas and peanuts — the quickest dessert there is.

Rico's note: Always freeze extra ripe bananas so they don't go to waste, and use them here when you want something sweet and cold after dinner.

Ingredients

  • 4 ripe bananas, sliced and frozen (400 g / 14 oz)
  • 2 tbsp 100% natural peanut butter (32 g / 1¼ oz)
  • 45 ml (3 tbsp) almond milk
  • 1 tsp vanilla extract (5 g)
  • 15 g (½ oz) roasted peanuts, chopped — optional

Method

  1. Slice the bananas into rounds and freeze them for at least 4 hours in a bag or container.
  2. Put the frozen banana slices in the food processor.
