Banana cake with coconut flour

A dark, dense banana cake made only with coconut flour.

Rico's note: On Sundays when there are ripe bananas left in the fruit bowl, this is the cake that comes out of the oven. Coconut flour thickens a lot, so don't panic when the batter is almost solid.

Ingredients

  • 2 ripe bananas, mashed (240 g / 8½ oz)
  • 1 cup coconut flour (112 g / 4 oz)
  • ½ cup white or brown sugar (100 g / 3½ oz) — no added sugar: ⅔ cup erythritol (133 g)
  • 1 tsp ground cinnamon (2 g)
  • 1 tsp baking powder (4 g)
  • 1 tsp baking soda (5 g)
  • 4 eggs (200 g / 7 oz)
  • ½ cup melted coconut oil (100 g / 3½ oz)
  • ¼ cup coconut milk (60 g / 2 oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F). Grease and line a loaf pan.
  2. In a bowl, mix the coconut flour, sugar, cinnamon, baking powder and baking soda.
