Avocado cocoa brownie

No flour at all — the avocado provides the base and the creaminess.

Rico's note: When you have an avocado going past its prime and don't feel like salad, this solves both problems.

Ingredients

  • 1 medium ripe avocado (200 g / 7 oz)
  • 45 g (1½ oz) 100% cocoa powder
  • 140 g (5 oz) white or brown sugar — no added sugar: 142 g xylitol
  • 3 eggs (150 g / 5½ oz)
  • 1 tsp baking soda (5 g)
  • 1 tsp vanilla extract (4 g)
  • 85 g (3 oz) 100% cacao chocolate chips — optional

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect. Keep it away from dogs: xylitol is toxic to them.

Method

  1. Preheat the oven to 180 °C (350 °F), then grease a small 20 × 20 cm (8 × 8 in) pan and line it with parchment paper.
  2. In the food processor, blend the avocado, cocoa powder and sugar until smooth, with no lumps.
