Avocado and dark chocolate mousse

A creamy dairy-free dessert with nuts toasted in the air fryer.

Rico's note: The dessert for when you want something sweet that won't sit heavy — it just needs time in the fridge.

Ingredients

  • 2 medium ripe avocados (300 g / 10½ oz)
  • 100 g (3½ oz) dark chocolate (at least 70% cacao)
  • 4 tbsp maple syrup, or another natural sweetener (60 g / 2 oz)
  • 60 ml (¼ cup) plant-based milk (almond or oat)
  • 1 tsp vanilla extract (5 g)
  • 1 pinch fleur de sel (1 g)
  • 50 g (1¾ oz) walnuts or almonds (for toasting)
  • berries, to garnish

Method

  1. Melt the dark chocolate in a water bath (double boiler) or in the microwave, stirring until smooth. Let it cool slightly.
  2. Peel and pit the avocados and put the flesh in a food processor or blender.
