Values are for the first option listed in the ingredients; substitutions and variations change them. Carbs exclude fiber; energy uses the EU conversion factors (fiber at 2 kcal/g). Quantities and times are a starting point: adjust them to your taste. Two things don't change: poultry and ground meat must be cooked all the way through, and allergens — always check the labels.

Apple cream with walnuts

Cooked apple, roughly blended, with chopped walnuts on top.

Rico's note: A great way to use up the apples left in the fruit bowl on a Sunday night — a simple habit worth keeping.

Ingredients

  • 4 reinette apples, peeled (600 g / 1¼ lb)
  • 50 g (1¾ oz) chopped walnuts
  • 1 tsp ground cinnamon (3 g)
  • 200 ml (¾ cup) almond milk
  • 3 Medjool dates, blended into a paste (60 g / 2 oz)
  • ½ lemon, juice only (15 g / ½ oz)
  • whole walnuts (10 g) — to decorate

Method

  1. Cut the apples into cubes.
  2. Put them in a saucepan with the almond milk, cinnamon and lemon juice.
