Apple cinnamon compote

Apples cooked down slowly into compote, without a gram of sugar.

Rico's note: This replaces store-bought jams full of hidden sugar. Make a big jar on Sunday and use it at breakfast all week.

Ingredients

  • 6 reinette apples, peeled (900 g / 2 lb) — cut into medium cubes
  • 1 lemon, juice only (30 g / 1 oz)
  • 1 cinnamon stick (3 g)
  • 1 tsp ground cinnamon (3 g)
  • 4 tbsp water (60 g / 2 oz)
  • lemon zest, to taste — optional

Method

  1. Cut the apples into medium cubes.
  2. Put them in a saucepan with the lemon juice, water, cinnamon stick and ground cinnamon, plus the lemon zest, if using.
