Apple cake with coconut flour

Grated apple, skin on, and cinnamon in a dense coconut flour cake.

Rico's note: This one joins the rotation whenever there are apples left in the fruit bowl — you won't notice the grated skin, and it adds even more fiber.

Ingredients

  • 1 large apple, grated with the skin on (200 g / 7 oz)
  • 1 cup coconut flour (112 g / 4 oz)
  • ⅔ cup white or brown sugar (135 g / 5 oz) — no added sugar: 1 cup erythritol (190 g)
  • 1 tsp cinnamon (3 g)
  • 1 tbsp baking powder (12 g)
  • 6 eggs (300 g / 10½ oz)
  • ½ cup melted coconut oil (103 g / 3¾ oz)
  • ½ cup coconut milk, or water (120 g / 4 oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F), then grease and line the pan.
  2. Combine the dry ingredients: coconut flour, sugar, cinnamon and baking powder.
