Angel food cake with no added sugar

Angel food cake as light as a cloud, almost fat-free.

Rico's note: Angel food is one of the lightest cakes there is, almost fat-free. The secret is beating the egg whites slowly at first and not rushing.

Ingredients

  • 12 egg whites, at room temperature (396 g / 14 oz)
  • 1½ cups powdered erythritol (195 g / 7 oz)
  • 1 cup rice flour, or gluten-free flour blend (150 g / 5½ oz)
  • ½ cup cassava starch, polvilho doce (60 g / 2 oz)
  • 1½ tsp cream of tartar (5 g)
  • 1 tsp vanilla extract (4 g)
  • ½ tsp salt (3 g)

Method

  1. Preheat the oven to 170 °C (340 °F). Use an ungreased tube pan.
  2. Sift the rice flour and cassava starch together three times. Set aside.
