Almond flour beignets

Fried little doughnuts, fluffy inside, dusted with powdered sugar.

Rico's note: This is the treat for when you want a real Saturday-night party feeling — it comes out hot and goes perfectly with coffee.

Ingredients

  • 1 cup almond flour (100 g / 3½ oz)
  • ¼ cup coconut flour (28 g / 1 oz)
  • 3 tbsp sugar (36 g / 1¼ oz) — no added sugar: ¼ cup erythritol (48 g)
  • 2 tsp baking powder (8 g)
  • 2 eggs (100 g / 3½ oz)
  • 2 tbsp melted coconut oil (26 g / 1 oz)
  • coconut oil, for frying (15 g / ½ oz) — estimated amount absorbed
  • powdered sugar, for dusting (7 g) — no added sugar: powdered erythritol (for dusting), to taste

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. In a deep saucepan, heat the coconut oil for frying to about 170 °C (340 °F).
  2. In a bowl, mix the almond flour, coconut flour, sugar and baking powder.
